It reminds me of cold rainy nights when all you want is something tasty and easy, without a pile of dishes afterward. And guess what? This recipe only uses one pot!
🧺 Ingredients:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 cups sliced mushrooms (any kind you like)
- 8 oz (about 225g) pasta (fettuccine, linguine, or penne work well)
- 3 cups vegetable broth
- 1 cup milk (any kind – regular or plant-based)
- ½ cup grated Parmesan cheese (or nutritional yeast for vegan)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
👩🍳 Step-by-Step Instructions:
- Heat the pot:
In a large pot, heat the olive oil over medium heat. - Cook onions & garlic:
Add the chopped onion and garlic. Stir and cook for about 2–3 minutes until soft and fragrant. - Add mushrooms:
Toss in the sliced mushrooms. Cook for another 5 minutes until they shrink and start to brown. - Add pasta & liquids:
Add the dry pasta, vegetable broth, and milk. Stir everything gently so the pasta doesn’t stick together. - Simmer until tender:
Bring it to a boil, then lower the heat and simmer uncovered. Stir every couple of minutes. Let it cook for about 10–12 minutes, or until the pasta is soft and most of the liquid is gone. - Stir in cheese:
Turn off the heat and stir in the Parmesan cheese. Taste and add salt and pepper if needed. - Garnish & serve:
Sprinkle some chopped parsley on top and serve warm!
